Diners will see an influence of beer and food pairings along with a mix of interesting twists on some of the family’s favorite Greek recipes. Using locally sourced small business products, the local flavors and world flair combine to allow our signature style to flourish.
The “live edge” bar features a unique mix of domestic craft beers, wines, and spirits. The Red Cedar Grille’s cocktail menu features top shelf distilleries specializing in distinctive gins, vodkas, and whiskeys. The Grille’s love for craft beer will be showcased by 12 taps, a Beer Engine, and 40 different bottled beers. We have worked with our local craft beer friends to bring an eclectic mix of what these brewers have to offer.

Third generation restaurateur, Theo Charitos, Executive Chef and Owner of The Red Cedar Grille, remembers his humble beginnings cooking in his father Dino’s restaurant at age 13. After several years breaking child labor laws, Theo won a city-wide cooking competition hosted by Jean Maries Lacroix, Philippe Chin, Georges Perrier, and other high profile chefs in Philadelphia that included a full scholarship to Johnson & Wales and an apprenticeship to the Four Seasons in Philadelphia.
Chef Theo, after a whirlwind tour of studying classic cuisine in The Netherlands, returned home to become the Chef at CAV – an eclectic restaurant dealing in inspired cuisine and antiquities. Cav consistently won awards and was honored as the Best of Rhode Island restaurants year after year.
At 21 years of age, Chef Theo returned home to Philadelphia to open Davio’s. After 2 successful years with this Northern Italian steakhouse, Chef Theo was lured away by The Drafting Room a boutique restaurant chain specializing in classic American cuisine and craft beers, to be the Corporate Chef. While at the helm, Chef Theo excelled in creating a culinary marriage between craft beer, small batch scotch and cuisine. Consistingly reinventing himself, Chef Theo was given the opportunity to brew The Drafting Room’s annual Ale at the Troegs Brewary in Hershey, PA with the Brothers Troeg.
12 years later, Chef Theo and Dino Charitos, have established The Red Cedar Grille.
